Today’s recipe is for Avocado Bacon and Eggs. The first time I saw this, I knew I had to make it. Avocados are a great source of healthy fat, so why not have it for breakfast! This combination of avocado with the cheese, bacon and egg makes such a simple and filling breakfast.
*1 medium avocado
*1 slice cooked turkey bacon, chopped
*2 tablespoons sharp cheddar cheese salt if desired
1. Preheat oven 425 degrees
2. Cut avocado in half and remove pit.
3. With a spoon, cut out center of avocados a little bigger than the size of the yolk.
4. Place avocado halves in a muffin pan.
5. Crack egg and add to center of avocado, sprinkle cheese and turkey bacon on top.
6. Cook 14-16 minutes.
